Rhubarb Cake

Melt 1 stick margarine in bottom of pan. Mix 1 cup sugar,

1cup flour, 2 teaspoons baking powder, ¾ cup milk. Pour on top of margarine.  Add 3 cups of rhubarb on the top.  Add sugar if needed. Bake one hour at 375 degrees in a Pyrex or glass pan.  Do not use a metal pan.

Simple Coffee Cake Recipe from Elsie Green

 ¼ cup salad oil

1 beaten egg

½ cup milk

½ teaspoon salt

1¼cup flour

2 teaspoons baking powder

¾ cup sugar

 Mix dry ingredients together.  Then add milk mixture.  Pour in 8x8 pan and sprinkle with crumb topping.

 Crumb topping

¼ cup brown sugar

1 teaspoon cinnamon

1 tablespoon flour

1 tablespoombutter

½ cup chopped nuts

Mix and spread over cake.  Bake at 375º for 25 minutes.

40 Days of Giving

For the last couple of years, I have observed Lent by giving

many of my household items and clothes to the thrift shop. 

Lent begins March 6th this year and I encourage others to join

me in 40 Days of Giving.  We strive at Highland Thrift to live

The mission of Jesus Christ and serve the poor and suffering

in our region.  I will post donation pictures online in the

coming weeks and I encourage you to do the same.
